WHAT YUZU IS : A force of nature
Citrus junos is the botanical name of Yuzu and is the cross between wild mandarin and lemon. The name “yuzu” denotes both the fruit and
the tree.
It thrives in the wild in central China and Tibet.
It is also an iconic citrus fruit of Japan, from where it has been imported for millennia.
The Yuzu tree can reach 4 meters in height. It is a thorny tree that can withstand temperatures of -5 ° C.
Its size corresponds to an orange while its green color turns yellow when ripe. The skin of the fruit is thick and irregular. Its pulp is not very
juicy. Its taste is sweet and sour.

SO’BiO étic® has chosen a YUZU organic and fair trade from a 100% French family unit, which follows an agro-ecological approach. Yuzu,
which is rarely grown in France, however, is well acclimatized in the heart of this family unit located in the Ardèche. The aromatic and
medicinal plants (verbena, passion flower or geranium) which were chosen to create a microclimate of coexistence with Yuzu, have been
planted just under the trees. Yuzu fruits are harvested in full ripening by hand once a year, in October and November.
